Made the slow way

Four ingredients — flour, water, salt and starter. The rest is time.

  • Egyptian wheat

    Stone-milled wheat from a family mill in Fayoum, with the bran left in for a deeper flavour.

  • 48 hours, no shortcuts

    Our starter does all the rising. No commercial yeast, no improvers, nothing to hurry it along.

  • Out of the oven twice

    The first bake is ready at 7:30 am and the second at 4 pm, so evening bread is fresh too.

  • A café to linger in

    Long tables, specialty coffee and breakfast on our own toast until noon.

From starter to crust

Every loaf goes through the same four steps over two days.

  1. Feed the starter

    Our starter, alive since 2017, is fed flour and water every morning.

  2. Mix and fold

    The dough rests and is folded by hand every half hour for four hours.

  3. Rest overnight

    Shaped loaves rest in the cold for up to 36 hours to build flavour.

  4. Bake with steam

    A hot stone deck and a burst of steam give the crust its crackle.

Bread questions

What time is the bread ready?

The first bake is ready at 7:30 am and the second at 4 pm. Popular loaves often sell out by early afternoon, so reserve on WhatsApp if you are coming later.

Can I reserve bread in advance?

Yes. Message us on WhatsApp before 8 pm and we will hold your loaves for the next day at the branch you choose.

Do you deliver?

Yes, within Maadi, Degla and Zahraa El Maadi from 9 am to 8 pm, with free delivery on orders over EGP 500.

Is your bread vegan?

Yes — all our plain loaves are vegan: just flour, water, salt and starter. Croissants, buns and babkas contain butter, milk or eggs.

How should I store a sourdough loaf?

Keep it cut-side down on a board or in a cloth bag for up to three days. For longer, slice and freeze it, then toast straight from the freezer.
